Barbocoa Beef

2.2-2.5 kg Beef Brisket

1 tblsp olive oil

215 gm can chipotles in adobo sauce

1 red onion,

2 cloves garlic

11/2 tsp ground cumin

1tsp oregano flakes

¼ tsp ground cloves

2 bay leaves

1 tblsp apple cider vinegar

500 ml Campbells Grass Fed Beef stock

STEP 1 Preheat oven to 160C.

STEP 2 Place chillies in adobo, onion, garlic, cumin, oregano and cloves in a the small bowl of a food processor. Process to a paste like consistency

STEP 3 Heat oil in a ovenproof/stovetop proof saucepan and brown brisket all over.

STEP 4 Place the paste mixture with Brisket, bay leaves, vinegar and Campbells Grass Fed Beef Stock.

STEP 5 Place in the oven for 3 hours. Remove from oven. When cool shred meat and return to sauce. If sauce needs thickening place on stove top for 5 minutes before returning shredded beef.

STEP 6 Serve with avocado salsa, sour cream and tortillas
