Coq Au Vin

3 tbs oil

4 slices bacon, roughly chopped

1/2 cup flour

4 chicken marylands or 8 chicken drumsticks

2 medium onions, sliced

2 cloves garlic, minced

1 cup button mushrooms, sliced

2 carrots, sliced

5 sprigs fresh thyme

2 tsp fresh rosemary

3 bay leaves

2 cups red wine

2 cups Campbells Real Stock No Added Salt Chicken

STEP 1 Preheat the oven to 180 degrees. Heat a medium sized heavy based casserole pot, add 1 tbs of oil and fry the bacon over medium heat until crisp. Transfer bacon to paper towel.

STEP 2 Coat chicken pieces in flour. Add the remaining oil to the pot, add chicken and cook until browned, then add onions & garlic. Saut for 1 minute. Add the rest of the ingredients and bring to the boil.

STEP 3 Cover with lid and place into the oven for one hour.

STEP 4 Season to taste then, serve Coq Au Vin with crusty bread or mash potato cooked with stock.
