1 tbs oil

2 cloves garlic, crushed

750g beef mince

2 cups bread crumbs

2 tbs chopped semi dried tomatoes

1 egg

cup fresh chopped flat- leaf parsley

500ml (2 cups) Campbells Real Stock – Beef, No Added Salt

GLAZE:

8 semi dried tomatoes

1 cup tomato sauce

4 tbs brown sugar

STEP 1 Preheat oven to 180C.

STEP 2 Grease and line 2, 19cm x 9cm base measurement loaf pans.

STEP 3 For the glaze place all ingredients into a food processor and blend until tomatoes are chopped. Set aside.

STEP 4 Heat oil in a medium sized frypan over medium heat. Add onion and garlic and cook for 3 minutes or until onions are soft.

STEP 5 Place cooked onion and garlic, mince, bread crumbs, semi dried tomatoes, egg, parsley, salt and pepper and Campbells Real Stock into a large bowl. Mix well until combined. Spoon into pans.

STEP 6 Using a pastry brush, brush the top of the meatloafs with a generous amount of glaze. Bake for 30 minutes, brush again with glaze and bake for a further 30 minutes.
