    cup shredded boneless, skinless chicken breasts, cookedor pork

  • 1

    (10-inch) flour tortilla, warmed

  • 1/2

    cup enchilada sauce

  • 1/2

    cup shredded Cheddar Jack cheese

How to Make It

Step 1

Spoon the chicken down the center of the tortilla. Top with half the enchilada sauce and half the cheese. Roll up the tortilla and place seam-side down onto a microwavable plate. Top with the remaining sauce and cheese.

Step 2

Microwave on HIGH for 1 minute 30 seconds or until the cheese is melted.

Recipe Tips

  • Flavor Variation: for a Cheesy Enchilada, omit the chicken and use 1 cup cheese. Place 3/4 cup cheese down the center of the tortilla. Top with half the enchilada sauce. Roll up the tortilla and place seam-side down onto a microwavable plate.  Top with the remaining sauce and cheese.  Microwave as directed above.

    5-Minute Cheesy Chicken Enchilada Grande

    This is a pleasantly flavorful recipe for those that don't have a whole lot of time to make dinner. I deviated from the recipe a bit and used ground beef instead of shredded beef, which not only saved on time, but saved on my pocketbook as well. :)
