Familes in all Spanish-speaking countries share a love of fideo, a traditional comfort food.  Each household makes it just a little differently.  Feel free to add your own personal touch: shredded cooked chicken or meat, chopped avocado, even peas and carrots make great additions.

    small onion, chopped (about 1/4 cup)

    package (7 ounces) uncooked fideo (Spanish pasta)

    can (10 3/4 ounces) Campbell’s® Condensed Tomato Soup

    can (10 1/2 ounces) Campbell’s® Condensed Chicken Broth

How to Make It

Heat the oil in a 2-quart saucepan over medium-high heat.  Add the onion and cook for 2 minutes.  Add the fideo and cook for 5 minutes or until lightly browned, stirring often to coat with the oil.
Stir in the soup, broth, water and garlic.  Season with the salt and black pepper.  Reduce the heat to medium.  Cook for 7 to 10 minutes or until the fideo is tender.

Recipe Tips

  • Ingredient Note: Browning the fideo noodles before you add the soup and broth helps the noodles keep their shape while the soup is boiling and adds a toasted wheat flavor to your dish.
  • Recipe Note: This recipe makes a thick version of fideo that will absorb most of the broth.  If you like a soupier fideo, add an additional 2 cans of Campbell's® Condensed Chicken Broth and another 2 soup cans of water.

    More Like Soup

    This is a little watery compared to the way my family has made Fideo for over a century. We use canned, diced tomatoes and make sure the pasta absorbs all the liquid. Then we cover it with cheese and let it absorb more. Ours serves more like a pie out of the cast iron skillet. The beef broth gave it a good flavor, but the tomato soup was just too sweet for this recipe.
