    pound lean ground beef

  • 1

    large onion, chopped (about 1 cup)

  • 1

    medium green pepper, chopped (about 3/4 cup)

  • 1 3/4

    cups Swanson® Beef Broth or Swanson® Beef Stock

  • 1

    can (about 8 ounces) tomato sauce

  • 1

    tablespoon chili powder

  • 1/2

    teaspoon garlic powder

  • 3/4

    cup uncooked regular long grain white rice

  • 1/2

    cup Cheddar cheese(optional)

    cup sour cream(optional)

How to Make It

Cook the beef, onion and pepper in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often to separate the meat. Pour off any fat. Stir the broth, tomato sauce, chili powder and garlic powder in the skillet and heat to a boil. Stir in the rice. Reduce the heat to low. Cover and cook for 20 minutes or until the rice is tender. Serve with the cheese and sour cream, if desired.

    Arroz Rojo with Beef

    This is a very delicious and easy dish with tons of flavor and not much prep work. I did add few dashes of crushed red pepper flakes while the onion and green pepper were sauteeing for a little heat. I topped with sour cream and cheddar jack cheese..deelish! Will definitely make again!

    Arroz Rojo with Beef

    I made a double batch for a high school Fall sports award potluck ceremony. After preparing this dish per directions (twice the amounts), I placed this casserole in a 9 x 13 glass baking pan for a nice presentation. Instead of serving cheese on the side, I decided to top this dish with shredded cheese. I sprinkled 8 oz. of shredded Jack/Cheddar (a Mexican style blend) and warmed it up in the oven for about 15 minutes until the cheese was melted and hot. We then packed up the casserole and immediately went to the high school. I printed out the recipe before hand and placed it along side the dish so everyone could see what they were taking. People appreciated this added touch! My dish was gone within ten minutes while other food remained on the serving table! It was an easy and nutritional dish...very well accepted by teenagers and parents! I highly recommend this!
