How to Make It

Heat the oven to 400°F.  Place the chicken into a roasting pan.  Bake for 30 minutes.  Pour the enchilada sauce over the chicken. Bake for 30 minutes or until the chicken is cooked through, occasionally basting the chicken with the sauce. Stir the sauce in the pan and serve over the chicken.

    I really enjoy this recipe. It is super easy to make and is an easy "Mexican" dish without having a lot of preparation.

    Baked Enchilada Chicken

    Both my two and four year olds cleaned their plates! And my husband loved it too. This will definitely become a staple in our house! Anything this easy and this delicious is worth it!
