Easy to make and really comforting, this beef and barley dish is sure to be enjoyed by all.  It only takes 20 minutes to prepare, then it simmers on the stovetop for 90 minutes until the barley is tender and flavorful.

    medium onion, chopped (about 1/2 cup)

  • 1

    clove garlic, minced

  • 2/3

    cup uncooked pearl barley

  • 4

    medium carrot, chopped (about 1 1/3 cups)

  • 3

    stalks celery, diced (about 1 1/2 cups)

  • 1

    can (28 ounces) diced tomatoes

  • 3

    cans (10 1/2 ounces each ) Campbell's® Condensed Beef Consommé

  • 2

    cups water

  • 1

    bay leaf

  • 1/4

    cup minced fresh parsley

  • 1

    can (10 3/4 ounces) Campbell's® Condensed Tomato Soup

How to Make It

Step 1

Cook the beef, onion and garlic in a 6-quart saucepot over medium-high heat until the beef is well browned, stirring often to separate meat.  Pour off any fat.

Step 2

Stir the barley, carrots, celery, tomatoes, consommé, water, bay leaf, parsley and tomato soup in the saucepot.  Reduce the heat to low.  Cover and cook for 1 1/2 hours, stirring occasionally, until the barley is tender.  Remove and discard the bay leaf before serving. 

Recipe Tips

  • Flavor Variation: You can serve this dish topped with croutons you make yourself.  Drizzle your favorite store-bought croutons with melted butter and toss with grated Parmesan cheese. Spread on a baking sheet and bake at 400°F. until golden brown.
