How to Make It

Step 1

Heat the oven to 350°F.  Lightly grease a 9 x 5 x 3-inch loaf pan.

Step 2

Beat the cake mix, 3/4 cup juice and eggs in a medium bowl with an electric mixer on medium speed for 3 minutes or until the batter is thick and smooth.  Pour the batter into the pan.

Step 3

Bake for 45 minutes or until a toothpick inserted in the center comes out clean.

Step 4

Let the cake cool in the pan on a wire rack for 10 minutes. Remove the cake from the pan and let cool completely on the wire rack.

Step 5

Stir the confectioners' sugar and remaining juice in a small bowl until the mixture is smooth.  Drizzle over the cake.

    Berry Pound Cake

    I baked this cake for 45 mins as suggested and it was far from being done. A packaged pound cake take50- 60 mins to bake, so I tried 60 mins and the cake was baked beautifully. I would make this cake again using the 60min time for baking. It was very, very easy to make.
