    teaspoon chili powder

  • 1/2

    cup Pace® Picante Sauce - Medium

  • 1

    can (about 15 ounces) black beans, rinsed and drained

  • 1 1/2

    cups frozen whole kernel corn

  • 6

    flour tortilla(8-inch), warmed

  • 1/2

    cup shredded reduced fat Cheddar cheese(about 2 ounces)

  • 1

    cup shredded iceberg lettuce

  • 1/4

    cup light sour cream

How to Make It

Step 1

Spray a 10-inch skillet with vegetable cooking spray and heat over medium heat for 1 minute. Add the carrot and chili powder and cook until the carrot is tender, stirring often.

Step 2

Stir the picante sauce, beans and corn in the skillet and heat to a boil. Reduce the heat to low and cook for 5 minutes or until the corn is tender.

Step 3

Spoon 1/2 cup bean mixture down the center of each tortilla. Top with the cheese, lettuce and sour cream. Fold the tortillas around the filling.

    Great easy recipe

    My daughter is vegan so when she visits I am always looking for recipes that can easily be turned to vegan. This was perfect for hers I always have the vegan cheese handy and also vegan sour cream. My husband and I also loved these, for us we used the regular ingredients since we are not vegan.

    Delicious & Easy Meal

    This dish was so easy to prepare for my family. I was looking for something quick & easy, I certainly found it with this dish, My family absolutely loved it & asked that I make it again.

    This was simple but good

    I thought when I was making this it was going to be bland. It actually was really yummy. I really liked it. I don't eat meat or very fatty foods, and this fit all those. Very good. For sure going to make again!

    Black Bean and Vegetable Tacos

    My husband had no interest in a meatless Taco, but found he absolutely loved them!! I didn't have any carrots so I sliced a red onion instead. I will definitely make these again!
