It’s a delightfully different way to enjoy bruschetta and it's guaranteed to brighten your day! This recipe was developed using hand-crafted Ecce Panis bread. If Ecce Panis isn't available in your market, you can substitute your favorite artisan-quality bread.

    Ecce Panis European Baguette, cut in half crosswise then lengthwise

    tablespoon butter, melted

  • 4

    ounces (1/2 of an 8-ounce container) mascarponeor cream cheese, softened

  • 1/2

    cup ricotta cheese

  • 1

    tablespoon chopped fresh mint

  • 1

    dash each saltand ground black pepper

  • 1

    dash black pepper

  • 1

    cup chopped assorted fresh fruit(strawberries, blueberries, kiwis), sweetened, if desired

How to Make It

Step 1

Heat the broiler.  Place the bread, cut-side up, onto a baking sheet.  Brush the bread with the butter.  Broil 4 inches from the heat for 2 minutes or until the bread is lightly toasted.

Step 2

Stir the mascarpone, ricotta cheese and mint in a medium bowl.  Season with the salt and black pepper, if desired.

Step 3

Spread the cheese mixture on the bread.  Top with the fruit.  Drizzle with the honey.
