Our Calabaza en Crema de Champiñon is a reinterpretation of classic Green Bean Casserole, using a favorite squash from Latin America, the tatuma squash (calabacita). Getting your family to eat their vegetables has never been so delicious!

large calabacita squash or 3 small zucchini, cut crosswise into 1/4-inch-thick slices
can (10 1/2 ounces) Campbell’s® Condensed Cream of Mushroom Soup or Campbell's® Condensed 98% Fat Free Cream of Mushroom Soup
teaspoon soy sauce
teaspoon ground black pepper
cups French's® French Fried Onions
Heat the oven to 350°F. Stir the squash, soup, milk, soy sauce, black pepper and 2/3 cup onions in a large bowl. Spoon the squash mixture into a 2-quart casserole. Cover the casserole.
Bake for 25 minutes or until the squash mixture is hot and bubbling. Stir the squash mixture. Sprinkle with the remaining onions.
Bake, uncovered, for 5 minutes or until the onions are golden brown.
