In the cattle-raising region of Northern Mexico, Carne Guisada or beef stew is typical ranch fare.  Slowly cooked and well seasoned, it is a tender and flavorful filling for hot corn or flour tortillas.

    small onion, chopped

How to Make It

Season the beef as desired.

Heat the oil in a 2-quart lidded sauté pan over medium-high heat. Add the onion and cook for 2 minutes, stirring occasionally. Add the beef and brown for 5 minutes. Add the chiles, tomatoes, garlic, soup and water. Reduce the heat to low. Cover and cook for 1 hour or until the beef is fork-tender, checking every 15 minutes and adding an additional soup can of water if the broth has reduced and the stew looks dry. Season to taste.

Recipe Tips

  • Ingredient Note: Selecting beef for stewing may seem puzzling if you have never cooked from scratch before.  Many times stew meat comes from the round, or back leg, which is usually tough yet flavorful.  Stewing for 60 to 75 minutes will make the stew meat fork-tender, and allow time for all of your carne guisada flavors to marry.
  • Recipe Note: When left whole, chiles can add flavor but do not make your dish significantly spicy.  However, if you like a very spicy stew, mince the chiles before adding them to the stew.

    Great reciepe!

    This reciepe was simple enough. Would for sure make again! Added a can of corn and some potatoes for texture. Turned out great!
