pound beef for stew, cut into cubes
tablespoons vegetable oil
small onion, chopped
serrano chili pepper
clove garlic, minced
can (10 1/2 ounces) Campbell’s® Condensed Old Fashioned Vegetable Soupor 1 can (10 3/4 ounces) Campbell s Condensed Vegetable Soup
cups (1 soup can) water
Season the beef as desired.
Heat the oil in a 2-quart lidded sauté pan over medium-high heat. Add the onion and cook for 2 minutes, stirring occasionally. Add the beef and brown for 5 minutes. Add the chiles, tomatoes, garlic, soup and water.
Reduce the heat to low. Cover and cook for 1 hour or until the beef is fork-tender, checking every 15 minutes and adding an additional soup can of water if the broth has reduced and the stew looks dry. Season to taste.
