How to Make It

Stir the potatoes, soup, sour cream, black pepper and onion in a medium bowl.  Spoon the potato mixture into a 1 1/2-quart baking dish. Bake at 350°F. for 30 minutes or until the potato mixture is hot.

Recipe Tips

  • Tip: To make 3 cups mashed potatoes, place 2 pounds potatoes, peeled and cut into 1-inch pieces, into a 3-quart saucepan.  Add water to cover and heat over medium-high heat to a boil.  Reduce the heat to low.  Cover and cook for 10 minutes or until the potatoes are tender.  Drain.  Mash the potatoes with 3/4 cup milk and 2 tablespoons butter.

    Great side dish!!

    Instead of mashed potatoes, I used Southern-style hash browns. I baked the dish 45 minutes and added shredded cheddar cheese the last 15 minutes. My hubby ate two helpings and said that they would make a wonderful breakfast as well!

    Tasteless!

    This was one of the most boring recipes I've tried. Used it for Easter dinner company and it was disappointing to say the least. No flavor, even after adding more pepper, a bit of salt and additional green onions. Blah!!!!

    Something else you may like to try

    I'm not a mashed potato fan myself. I use Scalloped potatoes instead of mashed. For me that seems to be a heartier casserole. This is very similar to a cheesy scalloped potatoes recipe that I've had for years. If you were to run a search for "Cheesy Scalloped Potatoes" I'm sure you would find it or something similar, it's a very flexible recipe.
