Originally developed with Tuscan Flavor Infused Broth, we’ve updated this recipe to use Swanson® Chicken Broth and Italian seasoning for the same delicious flavor as before. This rustic stew is the perfect comfort food. Slow simmer bone-in chicken pieces until so tender they fall off the bone and the sauce becomes so rich and flavorful you won’t want to waste a drop. Serve over pasta or rice or with crusty Italian bread to soak up every bit of delicious flavor.

cup all-purpose flour
tablespoons olive oil
extra large onion, diced (about 1 1/2 cups)
medium green pepper, diced (about 1 cup)
package (8 ounces) sliced mushrooms
cloves garlic, minced
can (14.5 ounces) diced tomatoes, drained
tablespoons tomato paste
cups Swanson® Chicken Broth or Swanson® Natural Goodness® Chicken Broth or Swanson® Organic Chicken Broth
cup dry white wine
teaspoon Italian seasoning, crushed
tablespoons lemon juice
tablespoons chopped fresh parsley
Season the chicken as desired. Coat the chicken with the flour.
Heat 2 tablespoons oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until browned on all sides. Remove the chicken from the skillet. Pour off any fat.
Heat the remaining 1 tablespoon oil in the skillet. Add the onion, green pepper and mushrooms and cook for 5 minutes, stirring occasionally. Add the garlic and cook and stir for 1 minute. Add the tomatoes and tomato paste and cook for 5 minutes, stirring often.
Add the broth, wine and Italian seasoning and heat to a boil. Cook for 5 minutes. Reduce the heat to low. Return the chicken to the skillet. Cover and cook for 25 minutes or until the chicken is cooked through, cooking uncovered for the last 10 minutes of the cooking time so that the sauce can thicken. Stir in the lemon juice. Season to taste. Sprinkle with the parsley.
