tablespoon olive oil
cup thinly sliced red onion
cups Swanson® Chicken Broth or Swanson® Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth
medium carrot, peeled and sliced (about 1/2 cup)
small fennel bulb, thinly sliced (about 1/2 cup), reserving fronds (leaves)
cup uncooked medium shell shaped pasta
cup diced cooked chicken
Heat the oil in a 4-quart saucepan over medium heat. Add the onion and cook for 5 minutes or until tender-crisp, stirring occasionally.
Stir in the broth, carrot and sliced fennel. Increase the heat to medium-high. Heat to a boil. Stir in the pasta and chicken. Reduce the heat to medium. Cook for 10 minutes or until the pasta is tender, stirring occasionally. Season with salt and black pepper.
Chop reserved fennel fronds to make 1/4 cup. Sprinkle over the soup.
