    medium carrot, peeled and sliced (about 1/2 cup)

  • 1

    stalk celery, coarsely chopped (about 1/2 cup)

  • 1/4

    cup uncooked long grain white rice

  • 1

    cup cubed cooked chicken

How to Make It

Step 1

Heat the broth, carrot and celery in a 3-quart saucepan over medium-high heat to a boil.

Step 2

Stir the rice in the saucepan.  Reduce the heat to low.  Cover and cook for 20 minutes or until the rice is tender.  Stir in the chicken and cook until the mixture is hot and bubbling. Season to taste.

Recipe Tips

  • Cooking for a Crowd: To double the recipe, use a 4-quart saucepan.  Use a 49 1/2-ounce can Swanson Chicken Broth and double the remaining ingredients.  Stir in 1/2 teaspoon dried thyme leaves, crushed, if desired.
