    pound skinless, boneless chicken breast halves, cut into cubes

    cup , crinkle-cut frozen carrots

  • 1

    cup frozen cut green beans

  • 3/4

    cup chopped onion

  • 6

    cups Swanson® Chicken Broth or Swanson® Chicken Stock

  • 6

    ounces (1/2 of a 12-ounce package uncooked ) cheese tortellini(about 1 cup)

  • 2

    tablespoons chopped fresh parsley

How to Make It

Step 1

Stir the cornstarch and water in a small bowl until the mixture is smooth.

Step 2

Heat 1 tablespoon oil in a 6-quart saucepot over medium-high heat. Add the chicken and cook until it's well browned, stirring often. Remove the chicken from the saucepot.

Step 3

Heat the remaining oil in the saucepot over medium heat. Add the carrots, beans and onion and cook until they're tender-crisp.

Step 4

Stir in the broth and heat to a boil. Add the tortellini and parsley, if desired. Cook for 10 minutes or until the tortellini is tender. Return the chicken to the saucepot and cook until the chicken is cooked through.

Step 5

Stir in the cornstarch mixture. Cook and stir until the mixture boils and thickens.

    Love this

    Like everyone else I make changes to this recipe. I put salt and paper on the chicken just before cooking. I use fresh onion and celery and then two cups of whatever frozen veggies I have on hand. I also add poultry seasoning while cooking the veggies to get more flavor.

    A Real Keeper!

    This recipe was easy to make & absolutely delicious! My family loved it and look forward to having it again. I used fresh carrots that i steamed for 5 minutes, instead of frozen and added a packet of chicken gravy mix at the end, because it was a little too soupy. A big plus was that my son was able to help cook along with me by adding the various ingredients to the stew pot - I think that made him love it more. YUM!!!

    Chicken & Tortellini Stew

    I changed up this recipe. The original recipe has way to much sodium!!! If you have two helpings that is over your sodium count for the day! So I cut the chicken stock. I used only one cup of the stock and added 5 cups of water. I also added more ingredients than the recipe called for. I chopped up some red and yellow potatoes, brown rice, celery, and some garlic. I used the carrots like the recipe called for except I used fresh carrots because I prefer fresh over frozen any day. I did not use the frozen green beans like the original recipe called for. I also used a rotisserie chicken which saves so much time. I seasoned the soup with some dry bay leaves, basil, oregano, and rosemary. This soup is good if you out a dollop of sour cream or mozzarella cheese on it. I would make this again, I made it how I would make my chicken and potato rice soup but instead of noodles I used the tortellini for this recipe.

    Chicken & Tortellini Stew

    We loved it! I didn't have enough chicken broth so I used water to make up the difference and added a few other frozen veggies and it turned out great! The leftovers were tasty too, I will make a double batch next time!
