  • 1 3/4

    cups Swanson® Chicken Broth or Swanson® Chicken Stock

  • 1

    tablespoon honey

  • 1

    tablespoon Dijon-style mustard

  • 2

    tablespoons vegetable oil

  • 1 1/4

    pounds skinless, boneless chicken breast halves

  • 1

    large carrot, cut into 2-inch matchstick-thin strips (about 1 cup)

  • 1

    medium onion, sliced (about 1/2 cup)

  • 1

    cup long grain white rice, prepared according to package directions (about 3 cups)

How to Make It

Step 1

Stir the cornstarch, broth, honey and mustard in a small bowl until the mixture is smooth.

Step 2

Heat 1 tablespoon oil in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Remove the chicken from the skillet.

Step 3

Reduce the heat to medium. Add the remaining oil to the skillet. Add the carrot and onion and cook until they're tender-crisp, stirring often.

Step 4

Stir the cornstarch mixture in the skillet. Cook and stir until the mixture boils and thickens. Return the chicken to the skillet. Reduce the heat to low.  Cook for 5 minutes or until the chicken is cooked through. Serve the chicken and sauce with the rice.

Use whichever you prefer- just follow the recipe as written above for the best result. If you're using larger chicken breasts they may require a little longer cooking time.

    Enjoyable and Easy, with Tweaks

    This is an enjoyable and easy recipe that can stretch well, though the standard recipe is missing something to make it especially tasty. First, it definitely needs salt and pepper, especially on the chicken as it's being browned, plus some in the sauce. Instead of adding more honey or mustard to liven up the sauce, I added about 1/4 teaspoon of sweet curry powder along with the salt and pepper; that really brought a lovely something extra! Those changes really made a difference, and this recipe has been part of my regular dinners since. On another note, I butterfly the chicken breasts to help speed things along even more, reducing the browning and simmering times accordingly.

    this was very easy to make. However,

    I just finished pouring the remainder of this dish down the garbage disposal. It had no taste. I didn't even want to give away what we didn't eat. I don't want my friends to think that I cook that way all the time!

    Chicken with Honey Mustard Glaze

    I made this for my family. It wasn't bad at all. It was missing just a little something so I added more 2 more tablespoons of honey and brown sugar. And instead of cutting the carrots I sliced them thin, my kids really liked that. Can't wait to make it again, just with my own special touch.
