    cup all-purpose flour

  • 2

    teaspoons chili powder

  • 1 1/2

    cups shredded Cheddar cheese (about 6 ounces)

    green onion, chopped (about 2 tablespoons)

How to Make It

Step 1

Heat the oven to 400°F. Lightly grease 24 (3-inch) muffin-pan cups.

Step 2

Beat the eggs, picante sauce, flour and chili powder in a medium bowl with a fork or whisk. Stir in the cheese and onion.

Step 3

Spoon about 1 tablespoon cheese mixture into each muffin-pan cup. Bake for 10 minutes or until the bites are golden brown. Serve warm or at room temperature with additional picante sauce.

    Very good with some tweeking

    I agree with some that this needs more flavor. The second time I made these, I used Rotel tomatoes and chili's instead of picante sauce. (I forgot to buy the picante sauce) . I added just a touch of hot sauce and cayenne. Then I cooked a little bulk type sausage and very soft scrambled some eggs in with the sausage, added a touch of hot sauce and spooned it over the base recipe before cooking. They were AWESOME for a finger food breakfast for a road trip.

    Great appetizer

    I used a hot picante sause and also added chicken & chopped chili's for more flavor. I also used a smaller size muffin tin. They came out good. You just have to doctor the recipe up a bit but their ideal for an appetizer if their made smaller. Went over great in my house!

    so easy to make

    Made these in a mini muffin tin, to take to girls night at church, everyone loved them and I brought home an empty container.

    Chili Con Queso Bites

    Nothing but a mushy mess. No flavor, they didn't completely fall apart but there was no way this was finger food.
