This tamale-inspired pie has a spiced beef and corn filling in a seasoned cornbread crust.  The crust is really quick to make- just toss cornbread stuffing with broth, then press into a pie plate and bake.  Save even more time by cooking the filling while the crust is in the oven.  It's delicious!

    cups unprepared Pepperidge Farm® Cornbread Stuffing

  • 1 3/4

    cups Swanson® Natural Goodness® Chicken Broth or Swanson® Chicken Broth

  • 1

    pound ground beef

  • 1

    medium onion, coarsely chopped (about 1/2 cup)

  • 2

    tablespoons chili powder

  • 1/2

    teaspoon ground cumin

  • 8

    ounces frozen whole kernel corn (about 2 cups)

    cup shredded Cheddar cheese (about 4 ounces)

How to Make It

Step 1

Heat the oven to 350°F. Place the stuffing and broth into a medium bowl and mix lightly. Let stand for 5 minutes or until the broth is absorbed. Reserve 1/2 cup stuffing mixture. Press the remaining stuffing mixture into the bottom and up the sides of a greased 9-inch pie plate.

Step 2

Bake for 15 minutes or until the crust is golden.

Step 3

While the crust is baking, cook the beef, onion, chili powder and cumin in a 12-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat. Stir the corn, cheese and reserved stuffing mixture in the skillet. Spoon the beef mixture into the crust.

Step 4

Bake for 10 minutes or until the beef mixture is hot. Serve with sour cream, if desired.

    Chili Corn Pie

    Way too much dressing-would reduce that by half and add more salsa and sprinkle cheese on top and up the stove to 375 or 400 as ours didn't come out very hot.

    After adding a can of black beans and half a teaspoon of garlic powder the recipe was even better than anticipated.

    This was so good. I also added a can of black beans and I didn't add as much corn, that made it even tastier! We Loved it!

    Chili Corn Pie

    I've made this twice so far and it has been good both times. It isn't a really quick recipe. My husband and I are watching our diets and I used fat free cheese, 98% fat free broth and ground turkey the second time I made it. I think it turned out even better then.
