    pounds skinless, boneless chicken breast halves

  • 1 3/4

    cups Swanson® Chicken Broth or Swanson® Chicken Stock

  • 1/2

    cup orange juice

  • 1

    medium onion, chopped (about 1/2 cup)

    cup uncooked long grain white rice

  • 3

    tablespoons chopped fresh parsley

How to Make It

Cook the chicken in a 10-inch nonstick skillet over medium-high heat for 10 minutes or until well browned on both sides. Remove the chicken from the skillet. Stir the broth, orange juice, onion and rice in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes. Return the chicken to the skillet. Cover and cook for 10 minutes or until the chicken is cooked though and the rice is tender. Stir in the parsley.

    Great

    I made this tonight, but used the suggestions that everyone else put on their reviews. I added garlic powder to the rice while it was steaming, and sauteed the onions also and I added grated lemon peel and it was fantastic!!!

    My family loved this recipe.

    I had to add a little more liquid. I also added orange zest to the rice and citrus blend grill seasoning the second time. It was perfect!

    Again, great with some tweaks.

    I sauteed the onions until they were a little brown before adding in the other ingredients. Also, in a separate pan, I sauteed some lemon wheels, which were a great garnish, as well as adding flavor. I (as a few others have said) added lemon juice and reduced the amount of broth slightly. Even my husband liked it!

    quick and simple...

    I put my own twist on this to add comfort food texture to it... when i add the chicken on the last step i also added some orange zest to it for a kick and then when completely done i added some can peas and a sprinkle of parm cheese and a spinkle of shredded cheddar cheese mixture!!! and presto.... instant comfort food!!!! yum!!!

    A few tweaks and its even better.

    I love this recipe, for those that are finding it bland try adding a few little extra touches. I reduce the chicken stock by a 1/4 cup and add a 1/4 cup of Lime juice to the Orange juice. I also put a little salt, pepper and garlic powder on my chicken before sauteing. This helps so much with the lack of something that it can need.
