Pork tenderloin bakes quickly, so it's great for the weeknight rush...but this recipe is so good, it's perfect for company too!

    cup Pace® Picante Sauce

  • 1

    can (11 ounces) mandarin oranges in light syrup, drained

  • 2

     pounds boneless pork tenderloin(2 tenderloins, about 1 pound each )

  • 1

    teaspoon olive oil

  • 2

    tablespoons chopped fresh cilantro

  • 1

    lime, cut into wedges

How to Make It

Heat the oven to 425°F. Stir the picante sauce and oranges in a small bowl. Place the pork into a 3-quart shallow baking pan. Rub the pork with the oil. Pour the salsa mixture over the pork.  Bake for 35 minutes or until the pork is cooked through. Remove the pork from the pan and let it stand for 10 minutes. Sprinkle with the cilantro and serve with the lime wedges.

    Citrus Picante Roast Pork

    This was a lot better then I think we were expecting. Great idea for something different! I would definitely consider making this dish again. Next time I would use more salsa, as we used a lot of it. Also for our family of two plus a toddler I will probably just make one pork loin instead of two. Great idea!

    This was a wonderful recipe. It was easy to make. At first I thougt the orange segments and salsa would not go together but is was wonderful. We will make this again. Thanks
