canister (13.5 ounces) Pepperidge Farm® Pirouette® Chocolate Fudge Rolled Wafers
cup heavy cream
cup confectioners' sugar
container (8 ounces) mascarponecheese, softened
tablespoons sweet dry Marsala wine
cup prepared coffeeor espresso
teaspoon vanilla extract
cup grated bittersweet chocolate
Reserve 8 wafers for garnish. Cut the remaining wafers into 2-inch-long pieces.
Beat the heavy cream and sugar in a medium bowl with an electric mixer on high speed until soft peaks form.
Stir the cheese, wine, coffee and vanilla extract in a large bowl with a fork or whisk until the mixture is smooth. Fold in 1/2 cup whipped cream.
Divide the coffee cream among 8 parfait glasses. Top each with about 1/3 cup wafer pieces. Top with the remaining whipped cream and the chocolate. Garnish with the reserved wafers. Serve immediately.
