    medium tomato, peeled, seeded and chopped (about 6 cups)

    medium cucumber, peeled, seeded and diced (about 1 1/3 cups)

    medium onion, finely chopped (about 1/2 cup)

  • 1

    small green pepper, finely chopped (about 1/3 cup)

    cloves garlic, minced

    cup olive oil

    tablespoons apple cider vinegar

    teaspoon freshly ground black pepper

How to Make It

Stir the tomatoes, vegetable juice, cucumber, onion, green pepper, garlic, oil, vinegar, black pepper and hot pepper sauce in a large mixing bowl. Cover the bowl and refrigerate for at least 1 hour or until ready to serve.

    Delicious

    The flavor is really good you do not have to worry about the exact amount of veggies it all comes together I made sure I made it low sodium. I made this because I wanted to add it to my diet it is very low in calories and sodium.

    great recipe

    to Maritimemama, the recipe actually does say 1/3 c is equal to 1 small pepper chopped. The cucumber is 1 1/3 c. This is actually a great recipe and a great way to use all those summer veggies! We love it

    A good,easy to prepare recipe

    A good base recipe for any time of the year. Try V-8 Spicy for some more flavor. I prefer not peeling tomatoes and scoring cucumbers lengthwise with a fork to retain vitamins and minerals located therein. Finely chopped Serrano pepper, added to taste, can add a flare to the soup... if you like. Occasionally I throw in a shot of tequila for some more zest. Enjoy.

    The recipe says a small green pepper = 1 1/3 cups - not 1/3 of a cup....and whoever approved the review missed it too apparently?

    Cool, Cool Gazpacho

    Delicious. I have tried many recipes for Gaspachio, but this is the only one I make. I rate it 5 stars!!!
