medium tomato, peeled, seeded and chopped (about 6 cups)
cups V8® V8® Original or V8® V8® Low Sodium
medium cucumber, peeled, seeded and diced (about 1 1/3 cups)
medium onion, finely chopped (about 1/2 cup)
small green pepper, finely chopped (about 1/3 cup)
cloves garlic, minced
cup olive oil
tablespoons apple cider vinegar
teaspoon freshly ground black pepper
teaspoon hot pepper sauce(or to taste)
Stir the tomatoes, vegetable juice, cucumber, onion, green pepper, garlic, oil, vinegar, black pepper and hot pepper sauce in a large mixing bowl. Cover the bowl and refrigerate for at least 1 hour or until ready to serve.
