  • 1/8

    teaspoon poultry seasoning

  • 1/8

    teaspoon dried thyme, crushed

  • 1

    medium carrot, peeled and sliced (about 1/2 cup)

  • 1

    stalk celery, sliced (about 1/2 cup)

  • 1

    small onion, finely chopped (about 1/4 cup)

  • 1/2

    cup uncooked long grain white rice

  • 2

    cans (4.5 ounces each ) Swanson® Premium White Chunk Chicken Breast in Water, drained

How to Make It

Step 1

Heat the broth, poultry seasoning, thyme, carrot, celery and onion in a 3-quart saucepan over medium-high heat to a boil.  Stir in the rice.  Reduce the heat to low.  Cover and cook for 20 minutes or until the rice is tender.

Step 2

Stir the chicken in the saucepan and cook until the mixture is hot and bubbling.

Recipe Tips

  • Time-Saving: You can substitute 1 can (16 ounces) mixed vegetables, drained, for the carrot, celery and onion in this recipe.

    Better than Average, Easy to make

    I was looking for something easy that used canned chicken and leftover: stock, carrots, onion. I followed this recipe remaining pretty true since this was 1st time. I did add some garlic powder and salt. The kids devoured it and asked for seconds, girls from 11 to 17. I made some canned biscuits to fill out menu. I was short on broth so I used some chicken bouillon cubes and water to make up. Next time I'll try to have additional chicken stock here. Recipe said fed four so I upped the stock, rice and carrots (cut the onion in half as kids don't like it) plus my chicken was the larger can. Worked out well, will try again.

    Country Chicken Soup

    This soup was WONDERFUL! Instead of canned chicken I used one chicken breast, cubed it into small bite-sized pieces, and then lightly sauteed them (in a tbsp oil), just until the sides were white. I then added the chicken just before covering pot. I also used a bit more rice and carrots than the recipe called for. I was going to add corn, but forgot -- next time.
