These will definitely earn rave reviews! This recipe was developed using hand-crafted Ecce Panis bread. If Ecce Panis isn't available in your market, you can substitute your favorite artisan-quality bread.

tablespoons butter, softened
loaf Ecce Panis Country White Loaf, cut into 6 (1/2-inch thick) slices
ounces (1 can) sliced peaches in juice, well drained
ounces white chocolate, grated
tablespoon confectioners' sugar
Spread the butter on both sides of the bread slices. Divide the peaches among 3 bread slices. Layer each with 1/3 cup raspberries, 1 teaspoon almonds and one-third the white chocolate. Top with the remaining bread slices.
Heat the panini maker. Add the sandwiches and cook for 5 minutes or until lightly browned. Sprinkle with the confectioners' sugar.
