medium onion, chopped (about 1/2 cup)
stalk celery, thinly sliced (about 1/2 cup)
cups Swanson® Chicken Broth or Swanson® Certified Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth
medium potato, peeled and cubed (about 3 cups)
tablespoon chopped fresh parsley
Heat the butter in a 3-quart saucepan over medium heat. Add the onion and celery and cook until tender.
Stir the broth and potatoes in the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the potatoes are tender.
Place half of the broth mixture and half of the milk in a blender or food processor. Cover and blend until smooth. Repeat with the remaining broth mixture and remaining milk. Return to the saucepan and heat through. Season to taste. Sprinkle with the parsley before serving.

This soup was very easy to make. To my surprise both of my children loved it! This is a really big deal because my son is a picky eater and my daughter only likes to eat things that she's already eaten before. I added a few extra green onions because I love them, but the taste of the soup was still very bland. I added salt and pepper to taste for my husband and to my surprise it was a big hit in my house. My daughter said it tasted like gold fish and she dubbed it the "gold fish soup." So for her, I definitely will be making the soup again.

I made this for lunch today. It took less than 30 minutes. I used 4 small potatoes everything else the same, except the milk. Only used a cup because I wanted it sort of thick. Used a had immersable blender insted of having to wash out my big blender. Added thyme and garlic. Will make a bigger batch next time!!!!

This is a very hearty,healthy soup. Not only is it very easy and quick to make, it is very economical. Which is a plus in the times we find ourselves in today. I topped it with a dollop of sour cream, chives and bacon bits. I will make this again and again.
