     pound ground beef

    package (about 1 ounce) taco seasoning mix or burrito seasoning mix

    can (about 16 ounces) refried beans

  • 1

    can (10 3/4 ounces) Campbell's® Condensed Cheddar Cheese Soup

  • 1

    medium onion, chopped (about 1/2 cup)

  • 1

    cup cooked cooked long grain white rice (optional)

  • 12

    flour tortilla (10-inch), warmed

  • 1 1/2

    cups enchilada sauce

  • 1/2

    cup shredded Cheddar cheese

How to Make It

Step 1

Heat the oven to 350°F.  Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat.  Pour off any fat.  Stir the seasoning mix, beans, soup, onion and rice, if desired, in the skillet.

Step 2

Divide the beef mixture among the tortillas. Roll up the tortillas and place seam-side down into a 3-quart shallow baking dish. Pour the enchilada sauce over the filled tortillas and sprinkle with shredded Cheddar cheese.

Step 3

Bake for 20 minutes or until the enchiladas are hot and bubbling.

    A meal the whole family agrees on!

    My children are VERY picky eaters and they both LOVED these! It was a win/win and husband and I loved them too! Super easy to make. I cut out the beans ( no one likes them) and used Fiesta Cheddar Soup instead of regular.

    Whole family loves these!

    I've made these probably four or five times now; the entire family loves them! Even my picky 8 year old is happy when it's enchilada night.

    Delicious. My family loves these.

    When I make these I usually make about 4 dozen - then freeze them in dinner sized packages. I also add a small can of HOT chopped green chilis. Also, I use any brand of AU JUS Gravy mix instead of the burrito mix. It makes the meat taste so good.

    Nice

    It was an easy recipe, I just may have to tweak it a bit more. I added some green chilis to the meat mixture to give it a bit more flavor. Otherwise it was an easy and filling recipe.

    Family Hit

    Got rave reviews from everyone in the family, I will be making this again and again. The only thing I will change next time is to put enchilada sauce on the bottom of the dish before I put the tortillas on top, so that they have sauce on all sides.
