Tender sautéed beef sirloin strips and enchilada sauce are wrapped up in tortillas with fresh onion, cheese, olives and onion. It just couldn't be easier!

tablespoon vegetable oil
pound boneless beef sirloin steak, cut into strips
cup canned enchilada sauce
(10-inch) flour tortilla, warmed
cup shredded Cheddar cheese(optional)
cup chopped tomato(optional)
cup pitted sliced black olives(optional)
cup chopped onion(optional)
Heat the oil in a 10-inch skillet over medium-high heat. Add the beef and cook until it's well browned and the juices evaporate, stirring occasionally. Add the enchilada sauce and cook until the beef mixture is hot and bubbling.
Evenly divide the the beef mixture among the tortillas. Top with shredded cheese, chopped tomatoes, sliced pitted ripe olives and chopped onions, if desired. Fold the tortillas around the filling.
