    cups Swanson® 50% Less Sodium Beef Broth

  • 1 3/4

    cups Swanson® Natural Goodness® Chicken Broth

  • 1/8

    teaspoon ground black pepper

  • 1/8

    teaspoon dried rosemary leaves, crushed

  • 6

    ounces sliced fresh mushrooms (about 2 cups)

  • 1/4

    cup thinly sliced carrot

  • 1

    small onion, finely chopped (about 1/2 cup)

  • 1/4

    cup sliced celery

  • 1/4

    cup fresh or frozen peas

  • 1

    tablespoon sliced green onion

How to Make It

Heat the beef broth, chicken broth, black pepper, rosemary, mushrooms, carrots, onion, celery and peas in a 4-quart saucepan over medium heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes. Add the green onion. Cook for 5 minutes or until the vegetables are tender.
Step 1

    Easy Mushroom Soup

    Very easy to make! I used fresh corn from the cob instead of peas and added 3 cloves of garlic minced. I increased the pepper to 1/4tsp (good heat) and used vegetable broth instead of the others. I got to say it turned out AMAZING! Yum Yum Yum! I think next time I will add potatoes :)

    Easy Mushroom Soup

    Cheap and ez soup recipe and a great way to sneak in your veggies. Has a very hearty, earthy taste and is surprisingly filling. You don't even miss the meat. The pepper can be overwhelming in this dish though so I'd advise to cut down on the amount unless you really like the spiciness.
