Here's a great use for leftover ham...add it to this simple scalloped potato recipe and you've got a side dish that really satisfies.

medium potato, peeled and thinly sliced (about 6 cups)
medium onion, chopped (about 1/2 cup)
cans Campbell's® Condensed Cream of Mushroom Soup or Campbell's® Condensed 98% Fat Free Cream of Mushroom Soup
pound cooked ham, chopped
Stir the potatoes, onion, soup, water and ham in a large bowl. Spoon the potato mixture into a 3-quart shallow baking dish.
Bake at 350°F. for 45 minutes or until the potatoes are tender.

I hate to cook so when I found this easy recipe I was thrilled! My family loves it. Instead of using whole potatoes I use a 20 oz package of frozen hash browns. Add some Mrs. Dash and Shredded cheese if you like and it really can be a good easy recipe!

We eat a lot of ham on the bone in Virginia. Consequently this recipe -- and simple variations of it -- is an old standby around here. Consider adding a little bit of sriracha sauce, Worcestershire sauce, or any spices that can compliment ham for a nice change of pace. And remember to slice the potatoes very thin so they bake in 45 minutes. And no, it's not "true" scalloped potatoes as Anonymous pointed out below. But then this website isn't the Russian Tea Room's cookbook or a Cordon Bleu training test either. The recipe on this site has been a kitchen standard (Betty Crocker Cookbook for example) since the early 1950s, and it has always been recognized as "scalloped potatoes and ham." Now get in the kitchen and make this for supper.

I didn't care for this at all. I sliced the potatoes pretty thin and after 45 minutes they still weren't tender, I had to let it go another 20 minutes. This also isn't scalloped. Cream of Mushroom Soup alone does not do it. This is potatoes and ham with Cream of Mushroom Soup on it.
