After reading reviews I substituted salsa for the ketchup (as I do in most recipes) - I find ketchup too sweet. Anyway - While browning the meat, I also added finely chopped onions (about 1/2 an onion). Then followed recipe, (substituting salsa for ketchup) put lid on and let cook. Then at end I grated sharp cheddar and sprinkled on top, put lid back on long enough for cheese to melt and then served.

This basic recipe is not bad, but a couple personal changes can make it a Super Supper...... Try adding a little bit of Steak Sauce to make it a little more robust. And truthfully, sliced "processed American cheese"........ Oh Yuck!!!!! How about a big handful of shredded Cheddar or some Colby Jack? Also, try it with some chopped onions and bell peppers. Don't be afraid to vary recipes to suit your own taste. Believe it or not, you do not have to follow most recipes exactly. You can substitute ingredients that you don't like with ingredients that you do like. Cooking should be fun.

I have made this recipe multiple times. The only things that I change is that I double the amount of water and cook it for 35 minutes. We live at a high altitude and the potatoes take longer to cook and the extra water makes the dish creamy. My husband and both of my boys love it!

Was bland to me also so I used LaVictoria Salsa Brava instead of ketchup. Also chopped up an onion and cooked it during browning of beef. Then towards end, when potatoes almost cooked, I added a can of Bush's chili beans (drained), heated thru then added shredded cheddar cheese instead of that processed sliced stuff.
