pound ground beef
can (16 ounces) whole kernel corn, undrained
jar (16 ounces) Pace® Picante Sauce
cup shredded Cheddar cheese (about 2 ounces)
box (about 8 ounces) corn muffin mix
Heat the oven to 375°F. Cook the beef in a 10-inch skillet over medium-high heat until it's well browned, stirring often to separate meat. Pour off any fat.
Stir the corn with its liquid, picante sauce and cheese in the skillet. Spoon the beef mixture into a 2-quart shallow baking dish. Prepare the corn muffin mix according to the package directions. Using 2 spoons, drop the batter evenly on top of the beef mixture.
Bake for 25 minutes or until the corn muffin topping is golden brown.

This is a great, SIMPLE recipe that is sure to be a crowd pleaser. I used 1 can of whole kernel corn (drained), instead of creamed corn, and I added 1 can of drained sliced black olives, 1 can of drained black beans, 1/2 of a chopped onion , and 1/2 packet of taco seasoning to the beef. I also used 2 corn muffin mixes instead of 1. It was wonderful!

My family loved this recipe. I took the advice of some of the reviews and added a half packet of taco seasoning, which made all the difference in the world. I didn't care for the corn bread on top because it was too sweet for me. My family loved it though. I will try this recipe again with cornmeal on top.

Good, but definitely needs a little added seasoning. Super easy to make and my family enjoyed it. I made it in a 10-inch cast iron skillet and probable should have doubled the recipe because the "filling" was a little thin.
