    teaspoon vegetable oil

  • 1/4

    cup chopped onion

  • 1

    clove garlic, minced

  • 1/4

    teaspoon dried thyme, crushed

    cups Swanson® Vegetable Broth

    medium carrot, peeled and sliced (about 1 cup)

  • 1

    medium potato, cut into 1-inch pieces (about 1 cup)

    cup fresh or frozen cut green beans

How to Make It

Step 1

Heat the oil in a 3-quart saucepan over medium-high heat.  Add the onion, garlic and thyme and cook until the onion is tender-crisp. 

Step 2

Add the broth, carrots, potato and beans to the saucepan and heat to a boil. Reduce the heat to low.  Cover and cook for 15 minutes or until the vegetables are tender.

  • Ingredient Note: One of the best things about soup recipes is how flexible they are.  You can substitute your favorite vegetables for the beans and carrots (or it's a great way to use up leftover veggies).

    Easy Vegetable Soup

    I'm not much for following recipes to a "t", I adjust them as I think sounds good. I made this recipe using half beef broth and half V-8 juice for more of a tomato taste. I also added stewed tomatoes, peas, and mushrooms to the vegetable mix. We like meat, so I added ground beef, and I also seasoned it with salt and pepper. But this is definitely a good base recipe to be added to as you like.
