    cup shredded Monterey Jack cheese (about 4 ounces)

How to Make It

Beat the eggs and 1/4 cup salsa in a medium bowl with a fork or whisk. Heat the butter in a 10-inch skillet over medium heat. Add the egg mixture and cook until the eggs are set but still moist. Stir in the cheese and tortilla chips.  Serve with the avocado and remaining salsa.

    Good way to doctor up scrambled egs

    Very easy. Very good combination of flavors. I love salsa with eggs, and the tortillas added a nice crunch and saltiness. I am sorry to say I did not have an avocado! Lots of Monterey Jack to add some creamy cheesiness.

    Scrambled Tortilla Eggs

    This was delicious! I tried substituting tortilla chips for real tortillas, I fried them a little, then added the eggs, cheese and sauce.
