    pounds skinless, boneless chicken breast halves

  • 2

    cloves garlic, minced

  • 1 3/4

    cups Swanson® Chicken Broth or Swanson® Chicken Stock

  • 3/4

    cup uncooked regular long grain white rice

  • 1

    bag (16 ounces) frozen California vegetable blend (broccoli, cauliflower, carrots)

  • 1/3

    cup grated Parmesan cheese

  • 1

    teaspoon paprika

How to Make It

Spray a 12-inch skillet with vegetable cooking spray and heat over medium-high heat for 1 minute. Add the chicken and garlic and cook for 10 minutes or until the chicken is well browned on both sides. Remove the chicken from the skillet. Stir the broth, rice and vegetables in the skillet and heat to a boil. Reduce the heat to low.  Cover and cook for 15 minutes. Stir in the cheese. Return the chicken to the skillet. Sprinkle the chicken with the paprika. Cover and cook for 10 minutes or until the chicken is cooked through and the rice is tender.
Step 1

  • Ingredient Note: We develop our recipes using a 4-to 5-ounce skinless, boneless chicken breast half per serving. However, there are a range of sizes available in-store, from the butcher counter to the meat case and the freezer section. Use whichever you prefer- just follow the recipe as written above for the best result. If you're using larger chicken breasts they may require a little longer cooking time.

    Garlic Chicken, Vegetable & Rice Skillet

    I made this recipe exactly as directed. The rice was not cooked so I continued to simmer until it was done. By this time the vegetables were like mush. If, and that is a big if, I would make this again, I would cook the rice and add the vegetables for the last 10 minutes when adding the chicken.

    Garlic Chicken, Vegetable & Rice Skillet

    I thought this was pretty good. I did make some changes to the recipe as presented. Instead of cooking spray, I used grapeseed oil to cook the chicken and garlic, and I used Romano instead of Parmesan cheese. I did think the chicken could have used a little salt, but other than that, I thought it was a good dish. My family enjoyed it and they are usually fairly picky eaters. Addressing some of the other comments, if the vegetables are frozen when it is added it in to the rice, it does not get overcooked, especially if the heat is lowered. One of the nice things about a recipe like this is the flexibility to make changes, like adding onion or stir fry vegetables, or changing what kind of cheese one uses. I will be making this again.

    I would make it again, just add onion and used stir-fry veggies instead.
