    cloves garlic, minced

  • 4

    medium red potato, cut into cubes (about 4 cups)

  • 2

    medium carrot, diced (about 1 cup)

  • 1

    medium onion, chopped (about 1/2 cup)

  • 1

    stalk celery, chopped (about 1/2 cup)

  • 2

    slices bacon, cooked and crumbled

  • 1

    cup milk

  • 1

    cup instant mashed potato flakes or buds

  • 1

    tablespoon chopped fresh parsley

How to Make It

Step 1

Heat the broth, garlic, potatoes, carrots, onion, celery and bacon in a 4-quart saucepan over medium-high heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the vegetables are tender.

Step 2

Reduce the heat to medium. Stir the milk, potato flakes and parsley in the saucepan. Cook until the mixture is hot and bubbling, stirring occasionally.

    Wholesome stick to your ribs kind of meal!

    My family and I found this recipe to be very delicious! I did for the most part follow the recipe, however I made a few changes. I added a package of Butterball turkey sausage, added just a little bit of salt, and used bacon bits instead of slices of bacon. For the instant potatoes, I used Hungry Jack Homestyle potatoes. I added a little more milk than what the recipe called for, because I thought it looked a little thick. We topped the soup with sharp cheddar cheese and a little bit of fresh cracked pepper. I do think it makes more than 5 servings though. We aren't complaining-I will make this again!

    Easy to make

    This recipe was very easy to make. I didn't have fresh parsley so I used Italian seasoning. To add a little flavor, I put in about a tsp of Lawry's seasoning salt. It made enough for 5 people. It turned out really good. I also put a pinch of pepper in my bowl before I ate it.
