    medium Yukon Gold potato (about 4 pounds), cut into 1-inch pieces (about 12 cups)

  • 2 1/4

    cups Swanson® Beef Broth or Swanson® 50% Less Sodium Beef Broth

  • 1/3

    cup white wine vinegar

  • 1/4

    cup diced red onion

  • 1

    tablespoon Dijon-style mustard

  • 1

    tablespoon sugar

  • 6

    slices bacon, cooked and crumbled

  • 1/4

    cup chopped fresh parsley

How to Make It

Step 1

Heat the potatoes and broth in a 6-quart saucepan over medium-high heat.  Cover and cook for 20 minutes or until the potatoes are tender.

Step 2

Stir the vinegar, onion, mustard, sugar, bacon and parsley in a large bowl.

Step 3

Pour the potato and broth mixture into the bowl with the vinegar mixture and stir to coat.  Let stand for 15 minutes, stirring occasionally.  Season to taste.

    Real German Potato Salad

    i'm german and my mother made german potato salad all the time and this is no where near what she made. when I went back to Germany this definitely was not what I ate. I would not make this ever and remember, german potato salad is always warm...

    Thanks for your feedback. Our test kitchen team did revise the recipe to improve the flavor and make it more authentic, but we realize there are many variations and time-honored family traditions that make certain recipes treasured favorites.

    This IS NOT German Potato Salad!!!

    It takes more than vinegar and celery seeds to make classic german potato salad. Where's the bacon? This recipe is not worth wasting your time or ingredients on. There are alot of better recipes for german potato salad on the the web, please keep looking and don't stop here!

    Not a go with this family!

    I will continue using the recipe that was given to me by a friend who has a traditional German Potato Salad recipe because this tasted nothing like what that one does! Sometimes trying to take a shortcut doesn't work and this was one of those times. To me and my family, this was a waste of time, money, and effort.

    Season as you like and it is good.

    I am confused by all the comments about the bacon. Bacon is listed in the recipe. I served it warm and it was good. It was just a slight variation on the traditional.

    Very good, family really enjoyed it

    I guess they updated the recipe to add bacon, it is on list of ingredients as well as instrutions. Will make again
