    cup uncooked instant brown rice

  • 1

    pound 90% extra lean ground beef

  • 3

    cups Prego® Prego® Heart Smart™ Traditional Italian Sauce

  • 6

    medium green pepper

  • 1

    cup shredded fat free mozzarella cheese (about 4 ounces)

How to Make It

Step 1

Cook the rice without salt or butter according to the package directions.

Step 2

Cook the beef in a 10-inch skillet over medium-high heat until it's well browned, stirring often to break up the meat. Pour off any fat. Stir 2 cups of the sauce and the rice in the skillet.

Step 3

Cut each pepper in half lengthwise. Discard the seeds and white membranes. Place the pepper shells in a 17 x 11-inch roasting pan.

Step 4

Spoon the beef mixture into the pepper shells. Pour the remaining sauce over the filled peppers. Cover the dish.

Step 5

Bake at 400° F. for 45 minutes or until the peppers are tender. Top with the cheese. Let stand for 5 minutes or until the cheese is melted.

Recipe Tips

  • Serving Suggestion: Serve with a salad of romaine lettuce and cherry tomatoes drizzled with lowfat balsamic vinaigrette.  For dessert, serve biscotti with prepared lemon curd for dipping.

    Easy and Good

    I make these regularly and they always turn out quite good. I do add a little corn in with them

    Lacks Something

    This recipe just lacks something......even though I added garlic salt, oregano, and basil and I sprinkled the peppers with season-all before stuffing them, it needed some extra oomph! Sweetness maybe. Just something extra. I will stick to my grandmother's stuffed pepper recipe (top secret) in the future.

    So easy and oh so good. We loved them

    I used very lean ground beef, sautéed a little onion and a little of the peppers chopped and used a dash of garlic powder. After combining the meat with the rice I added a small can of mushrooms. I also used a can of Tomato soup. I seasoned only with salt and black pepper. After baking these, I sprinkled the tops with the suggested cheese. My guests loved them and ate every bite. I served with some really good crusty bread I basted with a little butter. Then served the meal with a nice crisp salad. In my next attempt I will try the Prego Sauce. Enjoy, these were great

    the taste is awesome

    I changed the beef for ground turkey and I also added some onion and garlic powder to the meat while it was cooking.
