Just like a quiche, but without the crust, this delicious frittata features ham, potatoes and lots of cheese.  It's perfect for breakfast, brunch or a light dinner.

    cups shredded hash brown potatoes

  • 1 1/2

    teaspoons salt

  • 1/2

    teaspoon ground black pepper

    pound baked ham, cut into 1/2-inch cubes

    tablespoons milk

  • 1/2

    teaspoon Italian seasoning, crushed

    cups shredded Cheddar cheese, Monterey Jack or Swiss cheese (about 8 ounces)

How to Make It

Heat the oven to 350ºF.  Spray a 9 x 13 x 2-inch baking dish with vegetable cooking spray. Heat the oil in a 10-inch skillet over medium heat.  Add the potatoes. Season with 1/2 teaspoon salt and the black pepper.  Cook for 8 minutes or until the potatoes are lightly browned.   Stir in the ham.  Cook for 2 minutes or until the potatoes are browned, stirring occasionally. Beat the eggs, milk, Italian seasoning and remaining salt in a large bowl with a fork or whisk.  Place the potato mixture into the baking dish.  Stir in the egg mixture.  Cover the baking dish. Bake for 15 minutes.  Uncover the baking dish.  Sprinkle with the cheese. Bake, uncovered, for 15 minutes or until the cheese is melted and the egg mixture is set.  Let the frittata cool for 10 minutes.  Serve topped with the salsa.

    My kids loved this, I took off the salsa for them and gave them the ketchup.
