    pound ground beef

  • 1

    each small onion, chopped (about 1/4 cup)

  • 1

    teaspoon minced garlic

  • 1/4

    teaspoon dried parsley flakes

  • 3 1/2

    cups Swanson® Beef Broth or Swanson® 50% Less Sodium Beef Broth

  • 1

    can (about 14 .5 ounces) diced tomatoes

  • 1/4

    teaspoon Italian seasoning, crushed

  • 1 1/2

    cups uncooked mini lasagna noodle-shaped pasta (mafalda) or rotini pasta

  • 1/4

    cup grated Parmesan cheese

How to Make It

Cook the beef, onion, garlic and parsley in a 6-quart saucepot over medium-high heat for 10 minutes, or until the beef is well browned, stirring often to separate meat. Pour off any fat. Stir the broth, tomatoes and Italian seasoning in the saucepot and heat to a boil. Stir the pasta in the saucepot. Reduce the heat to medium and cook for 10 minutes or until the pasta is tender. Stir in the cheese. Season to taste.  Serve with additional cheese, if desired.

Recipe Tips

  • Serving Suggestion: Serve with an Iceberg lettuce salad with Italian vinaigrette. For dessert serve fresh apple slices.

    Hearty Lasagna Soup

    I have made this a few times and it's on the stove right now! I love it. It tastes like something thats complicated to make but it's not. Husband loves it too.

    Hearty Lasagna Soup

    The recipe as written is a bit bland, so I added a bit more herbs, a can of tomato sauce and paste and before adding the pasta I allow it to simmer, letting the flavors meld like meat sauce. I also use half italian sausage and half ground beef. This is more like lasagna and sooooooooooo good!

    Hearty Lasagna Soup

    I'm glad I made this. It was a last minute decision and was as easy as my original decision which was spaghetti. I wouldn't necessarily say it tastes like lasagna since its missing the ricotta but it's a flavorful dish none the less. My husband even went for seconds. Perfect for a cold winters night. I did add an additional can of beef broth and used lasagna noodles and just broke them up. Next time I'll add zucchini for an additional touch. This will serve 3 to 4 people comfortably.

    Hearty Lasagna Soup

    This recipe was so delicious! It tasted exactly like it sounds. Lasagna only in soup form. I let it thicken to the point where it wasn't really soup anymore (more like a pasta dish) and I thought it was great. I crumbled corn bread over the top and couldn't believe how tasty it was. This will definitely be in my weekly rotation!
