slices bacon, chopped
large onion, chopped (about 1 cup)
stalks celery, coarsely chopped (about 1 cup)
large carrot, peeled and coarsely chopped (about 3/4 cup)
ounces potato, peeled and diced (about 2 cups)
teaspoon dried thyme
cups V8® Sea Salt & Clam Vegetable Juice
cans (6.5 ounces each) chopped clams, undrained
Cook the bacon in a 4-quart saucepot over medium-high heat until crisp. Remove the bacon from the saucepot.
Add the onion, celery, carrot and potatoes to the saucepot and cook for 7 minutes, stirring occasionally. Add the thyme and cook and stir for 1 minute.
Add the vegetable juice and heat to a boil. Reduce the heat to low. Cover and cook for 20 minutes or until the vegetables are tender. Add the clams with juice and cook until the mixture is hot and bubbling. Top with the bacon before serving.
