    pound boneless beef sirloin steakor top round steak, cut int 1/2-inch cubes

    cups V8® V8® Original

  • 1 3/4

    cups Swanson® Beef Broth or Swanson® 50% Less Sodium Beef Broth

  • 1/2

    teaspoon dried thyme, crushed

  • 1/4

    teaspoon ground black pepper

  • 1

    medium potato, cut into cubes (about 1 cup)

  • 1

    medium carrot, sliced (about 1/2 cup)

  • 1

    medium onion, coarsely chopped (about 1/2 cup)

  • 1

    stalk celery, thickly sliced (about 1/2 cup)

How to Make It

Step 1

Heat the oil in a 4-quart saucepot over medium-high heat. Add the beef and cook until it's well browned, stirring often. Pour off any fat.

Step 2

Stir the vegetable juice, broth, thyme, pepper, potato, carrot, onion and celery in the saucepot and heat to a boil. Reduce the heat to low. Cover and cook for 30 minutes or until the vegetables are tender.

    Hearty Vegetable Beef Soup

    I have made this recipe many times. To get more flavor, after browning and draining the meat I saute the onions, celery and carrots until slightly softened. I also add other veggies. Diced tomatoes, mushrooms, green beans, sometimes a turnip or cabbage. My friends love this soup.

    Hearty Vegetable Beef Soup

    I don't know whether it was the beef broth or the V8 juice but there was something about this one that I just didn't particularly care for. It was relatively easy to make and smelled great while cooking but the taste was merely mediocre. I'd even say that it tasted like something that came right out of a soup can - literally. It didn't taste like ANY of it was homemade at all. It wasn't terrible but it wasn't amazing, either. It was very filling. I only needed one bowl full (one serving, I suppose) to fill me up but it was very, very bland. I don't think I will be making this one again any time soon. Also, a lot of the juice and broth simmered out while cooking. So, use a little extra of each.
