    tablespoons vegetable oil

  • 1

    large onion, chopped (about 1 cup)

  • 1

    small green pepper, chopped (about 1/2 cup)

  • 1/4

    teaspoon garlic powder

  • 1

    tablespoon chili powder

  • 1/2

    teaspoon ground cumin

  • 2 1/2

    cups V8® V8® Low Sodium or V8® V8® Original

  • 1

    can (about 15 ounces) low sodium black beans, rinsed and drained

  • 1

    can (about 15 ounces) low sodium pinto beans, rinsed and drained

How to Make It

Step 1

Heat the oil in a 2-quart saucepan over medium heat. Add the onion, pepper, garlic powder, chili powder and cumin and cook until the vegetables are tender, stirring occasionally.

Step 2

Stir the vegetable juice in the saucepan and heat to a boil. Reduce the heat to low.  Cook for 5 minutes.

Step 3

Stir in the beans and cook until the mixture is hot and bubbling.

    Great dish!

    I tweaked the recipe a little. Added more chili powder and cumin. My son begged me to add corn, so I did that too. A little sugar and garlic salt did the trick. Everyone loved it!

    Hearty Vegetarian Chili

    This was a quick easy dinner but I don't know if I would say hearty. It was tasty just the same!

    Hearty Vegetarian Chili

    There really isn't enough substance to this chili, and since this isn't slow cooked, the flavors aren't throughly incorporated into the dish.

    Hearty Vegetarian Chili

    I throw all the ingredients together at once into a crockpot, except for the garlic cloves, I put those in last on top. This takes me five minutes to prepare for cooking. I make it in the morning and let it sit in the slow cooker until I get home from work.
