Our version of potato pancakes is so easy and delicious that you'll want to make them for special occasions or for any occasion.

    medium all-purpose potato(about 3 pounds), peeled and grated (about 7 cups)

  • 2

    cans Campbell's® Condensed Broccoli Cheese Soup or Campbell's® Condensed 98% Fat Free Broccoli Cheese Soup

  • 3

    egg, beaten

  • 2

    tablespoons all-purpose flour

  • 1/4

    teaspoon freshly ground black pepper

  • 1/2

    cup vegetable oil

  • 1

    cup sour cream(optional)

  • 1/2

    cup chopped chives(optional)

How to Make It

Wrap the grated potatoes in a clean dishtowel or paper towel and twist the towel to squeeze out as much liquid as possible. Stir the soup, eggs, flour, pepper and potatoes in a large bowl. Heat 1/4 cup oil in a deep 12-inch nonstick skillet over medium-high heat. Spoon about 1/4 cup potato mixture for each pancake into the skillet, making 4 pancakes at a time. Press the pancakes to flatten. Cook for 4 minutes or until the pancakes are browned on both sides. Remove the pancakes from the skillet and drain them on paper towels. Cover and keep warm. Repeat with the remaining potato mixture, adding the remaining oil as needed. Serve the pancakes with sour cream and chives, if desired.

    Holiday Potato Pancakes

    I just made these for supper tonight to go with our Pork Loin Roast. We had friends and family over. I wanted to do something different with potatoes other than the usual mashed or baked potatoes. These potato pancakes were delicious! And everyone commented on how tasty they were. There were no leftovers! Thanks for the recipe!
