This sausage and rice casserole is seasoned with onions, green peppers and a creamy sauce...when you're in the mood for something especially tasty, give this dish a try!

pound hot Italian pork sausage, casing removed
large green pepper, chopped (about 1 cup)
large onion, chopped (about 1 cup)
stalks celery, chopped (about 1 cup)
cup uncooked long grain white rice
cans (10 1/2 ounces) Campbell’s® Condensed Cream of Chicken Soup
can (10 1/2 ounces) Campbell’s® Condensed Cream of Mushroom Soup
Cook the sausage in a 10-inch skillet over medium-high heat until it's well browned, stirring often to separate meat. Pour off any fat. Stir the pepper, onion, celery, rice, soups and 1 can of water in the skillet.
Spray a 3-quart casserole with vegetable cooking spray. Spoon the sausage mixture into the casserole. Bake at 400°F. covered for 45 minutes. Remove cover, stir and cook 15 minutes more.

I didn't have bulk sausage or long grain rice, but I did have spicy smoked sausage & orzo. I added minced garlic & some Cajun seasoning as others suggested. I also boosted the amount of water to 1 & 1/2 C due to the orzo. Sprinkled shredded cheddar over all in the last 15 & this was really tasty. Next time I'll try it with the bulk sausage & rice.

I also altered this recipe by adding 1 tsp minced garlic, and 1 cup of uncooked sliced mushrooms. I uncovered the casserole after 40 minutes, added cheddar cheese and baked uncovered for the last 15 minutes. We ate every bite. I am always looking for easy meals with lots of flavor...

This dish was crazy delicious! Very creamy, great flavor - my family of three polished off the entire dish, no leftovers. I added mushrooms at the advice of another reviewer, but other than that didn't change the recipe at all. This one is definitely a keeper and will go into rotation. The very definition of comfort food! Yum!
