large egg yolk
ounces bittersweet semi-sweet chocolate, finely chopped
ounces unsweetened unsweetened baking chocolate, finely chopped
teaspoons vanilla extract
Stir the sugar and cornstarch in a 3-quart saucepan.
Gradually whisk in the egg yolks, one at time, until the mixture is smooth.
Slowly whisk in the milk until the mixture is smooth.
Cook over medium-high heat, stirring constantly for 15 minutes, or until the mixture is thickened. Remove the saucepan from the heat and whisk in the chocolate and vanilla, until the chocolate melts and the mixture is smooth.
Immediately pour the pudding into 8 individual custard cups. Cover the surface of the pudding with plastic wrap to prevent a skin from forming. Let the pudding cool slightly and refrigerate for at least 2 hours or until ready to serve.
