tablespoon olive oil or vegetable oil
medium carrot, thinly sliced (about 1 cup)
medium zucchini, sliced (about 1 1/2 cups)
medium onion, sliced (about 1/2 cup)
cup Campbell’s® Tomato Juice
cup grated Parmesan cheese
teaspoon dried oregano leaves, crushed
teaspoon garlic powder or 1 clove garlic, minced
cups medium cooked tube shaped pasta (ziti) or medium shell-shaped pasta or rotini, drained
Heat the oil in a 10-inch skillet over medium heat. Add the carrots, zucchini and onion and cook until they're tender-crisp, stirring occasionally.
Stir the tomato juice, cheese, oregano and garlic powder in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the vegetables are tender.
Stir the pasta in the skillet and heat through, stirring occasionally.
