    pounds boneless, skinless chicken breast, cut into strips

    medium green pepper, chopped (about 1/2 cup)

  • 4

    cloves garlic, minced

  • 1 3/4

    cups Swanson® Chicken Broth or Swanson® Chicken Stock

  • 1

    can (14.5 ounces) diced tomatoes, drained

  • 1/2

    teaspoon Italian seasoning, crushed

  • 3/4

    cup uncooked long grain white rice

  • 1/4

    cup grated Parmesan cheese

  • 1/4

    cup thinly sliced fresh basil leaves

How to Make It

Step 1

Season the chicken as desired.  Cook the chicken, pepper and garlic in a 12-inch nonstick skillet over medium-high heat until the chicken is well browned, stirring often. Remove the chicken mixture from the skillet.

Step 2

Stir the broth, tomatoes, Italian seasoning and rice in the skillet and heat to a boil. Reduce the heat to low.  Cover and cook for 15 minutes.

Step 3

Stir in the cheese. Return the chicken mixture to the skillet. Cover and cook for 5 minutes or until the chicken is cooked through and the rice is tender.  Season to taste.  Serve topped with the basil.

    Add all the tomatoes, a cup of rice, two cups of chicken stock and salt to taste!

    Italiano Chicken & Rice

    I made this with brown rice and added balsamic vinegar to give the chicken extra flavor. Next time I will definitely add more garlic, tomato and seasoning. Great base recipe though, and easy to make!

    Italiano Chicken & Rice

    I will make this again, though the way I made it tonight. I took the basic idea and added some things. First, I doubled this, so if your family can really eat, double it at least, especially the rice. I cooked the chicken with one to two tablespoons minced garlic (We love garlic!) I also used half a can of tomatoes and next time I will use the whole can. I used about 1 1/2 teaspoons of Italian seasoning, sea salt and pepper, freshily grated parmesean cheese. When I added the chicken back to the rice I also added fresh bias cut green onion (I used just one though two would be good also.) We loved it. I practically inhaled mine, as did my five year old son. Our three year old daughter took a little longer but ate all of it. There weren't any leftovers, unfortunately. So I think I'll triple it next time. My husband really liked it and I think it would be good the next day after letting the flavor mix in more. Good base recipe, great final meal!
